Our new customer Robbie contacted us some weeks back, asking us to cater a sports event where up to two hundred people would need feeding at half-time. With two large, high-quality, local hogs roasting away for several hours so that we could make our delectable pigs in buns for most of the guests, our Hog Roast Loughborough chef and catering team would have plenty to do, but for this function, he also asked us about our alternative options.
Robbie imagined he would need a vegetarian dish and possibly a gluten-free dish too, so looked over our many possibilities and decided on an extra two options. The first would be our veggie skewers, where we grill halloumi, mushrooms, courgette, peppers, tomatoes and red onion and serve with pitta bread and a Tzatziki dip, and the second came as a surprise to Robbie – our pigs in buns are already suitable, just by using suitable bread rolls instead, which we could take along.
It came round to the day of the sports event on Saturday and our team arrived early in the morning and prepared the two pigs before setting them cooking and then watching over them as they sizzled away. Before we knew it, hours later, it was time to freshly prepare and grill the skewers and make our homemade stuffing and apple sauce, and get ready for the hordes to arrive at lunchtime.
