The first is their classic Hog Roast. The whole pig is roasted off-site over 12 hours on low heat. The travel time between site to the event allows resting time for the juices to be soaked back into the meat making it a melt-in-the-mouth consistency, completely tender and flavoursome. The sage and onion stuffing is cooked using the juices of the pig making it that much more flavourful. Before the pig is turned on, it gets scored where slits are made in the skin. Water and table salt are then massaged into the skin. By doing both these steps encourages the most amazing crackling with a real crunch. People have commented on how the meat is more moist than a spit-roasted pig and how it’s the best pork, stuffing and crackling they’ve ever had!
Another is the antipasti board. These were originally an option as alternative to a starter on the wedding menu’s, it has now become part of the new alfresco menu due to demand of how many people enquired and loved it. The fine selection of meats alongside the decadent cheeses and artisan breads compliments each other perfectly. These are enjoyed with nibbles of sun-dried tomatoes, rocket, mini cheese stuffed peppers and mixed olives. Completely indulgent.
The Southern Slow Roast menu has two options that particularly stand out in people’s feedback: the BBQ pulled pork and the Mac and cheese. The pulled pork gets marinated in a BBQ dry rub before being slowly roasted and a delicious bourbon BBQ sauce is added towards the end of the cooking time. The meat is completely succulent and full of flavour. Mac and cheese tend to be a comfort food for most people which is way it’s enjoyed on this menu. A creamy and cheesy pasta dish that immediately warms the heart.
